ATLANTIC HALIBUT WITH BUNDLES OF GREEN BEANS AND LEMON AROMA
- For 6 person
- Preparation: 30 minutes
- Cooking: 15 minutes
- 6 pieces of Atlantic halibut
- 18 bundles of green beans Tradition et Spécialités
- 8 pieces of mint
- 2 ladles of lemon zest
- 1 shallot
- 15 cl of white wine
- 130 g butter
- 2 ladles of olive oil
- Salt, pepper
Skin and cut the shallot. Fry it some seconds into a little pan. Pour the white wine and stir. Add the butter, whipping. Let cook 5 minutes and do not let boil.
Pass through the dressing in a colander and put it again in the pan. Salt, pepper and keep it in water bath cooking, stirring sometimes.
Warm up the bundles in oven or in a pan.
Wash and cut the mint.
Put the slices of Atlantic halibut in a bamboo steamer; add some lemon zest and mint.
Salt and pepper.
Let the fish cook 15 minutes in the steam.
Put the water out of the bundles, place them in a dish and add some olive oil.
Present the slices of fish over with some dressing.
