Vegetables mousse in a banana leaf basket

- 1Kg Carrots
- Zucchini, other vegetables,
- Some Banana leaf baskets from Tradition et Spécialités,
- 4 Eggs,
- 2 Egg yolk,
- 100g light cream,
- Salt, Pepper, Nutmeg.
Put two saucepans with salted water to boil. Boil the vegetables separately. When it is boiled, pass it through.
Place the vegetables in a ovenware and let them dry in order to extract the maximum of water. (do not let it be colorized).
Mix the vegetables into purée in the bowl of your mincing machine. Add the eggs and the crème fraîche. Season.
You get a creamy mousse. If you want mousse from two vegetables, just do the same with the other vegetables (Zucchini for instance).
Put the baking tins in a hulled ovenware (as big as the greased baskets) Fill the baking tins with the carrot mousse to the half. Put the second mousse in the other half.
Boil the mousse in a simmering pot. Put them in a warm oven (180°C). Let 30 to 40 minutes. When it is cooked, out of the oven, out of the simmering pot and let it cool down.
Put the mousse in the banana leaf baskets and serve.
